I’m obsessed with afternoon tea! But since it’s not practical to do it everyday, instead, our family tradition is cream tea after school. It’s time for an afternoon snack anyways so why not do it up a little fancy? I love all flavors of scones but so far I can only get my kids to eat chocolate chip scones. These are their favorite and very easy to make! I like to make a batch of these and freeze them so we can enjoy it daily. This recipe makes 8 scones if using a standard ice cream scoop.
1 2/3 cups all purpose flour
2.5 tsp baking powder
3 tbsp sugar
pinch of salt
3 tbsp unsalted butter
1/2 cup whole milk or heavy cream
1 tsp vanilla extract
1 large egg
Preheat oven to 400. I prefer to use parchment paper or Silpat on a baking sheet.
Mix the dry ingredients in a large bowl.
Cut in cold butter using your hands, 2 forks or a pastry blender (I use a pastry blender) until crumbly.
Whisk together the milk, egg and vanilla.
Add the wet to the dry ingredients (reserve a few teaspoons at the bottom) and mix with a spatula until it just comes together. Then use your hands to knead it together.
Use an ice cream scoop to place on baking sheet. Brush the tops with leftover liquids and bake for 12-15 minutes.
The tops should be golden and the center clean when you check it with a toothpick. Leave on baking sheet for a few minutes then move to a wire rack to cool just a few minutes to firm up. Serve with your favorite jam and clotted cream!
