Matcha Green Tea Loaf

Ingredients:

1/2 cup milk (or dairy substitute)

2 large eggs, room temperature

1/4 cup vegetable oil

1 tsp vanilla extract

3/4 cup sugar

1 cup all purpose flour

1 tbsp matcha green tea powder (I love Rishi Sweet Matcha Tea)

1 tsp baking powder

1/4 tsp salt

Directions:

Pour milk into liquid measuring cup. Let it get to room temperature.

Mix the eggs right into the cup along with the vanilla extract.

In a medium bowl, mix the flour, baking powder, salt and sugar.

Pour in the liquid mixture and add the oil to the bowl.

Whisk slowly until no more flour is showing. It’s good if the batter is lumpy and not overmixed.

Pour into the pan and bake for 45 minutes or until the edges pull away and the center comes out clean with a toothpick check.

Simple Glaze: (optional)

1/2 cup powdered sugar

pinch of salt

squeeze of lemon juice

1 tbsp vanilla coffee creamer (or milk)

Mix all of the ingredients in a small bowl. Add more milk to adjust the thickness of the icing. You can pour directly on the loaf in the pan or pour/drizzle on top after you plate it.
