1 1/2 cups flour
1/4 cup sugar
1 tbsp baking powder
1/4 teaspoon salt
1 1/4 cups milk
1 tsp vanilla extract
3 tbsp melted butter
Heat your griddle to medium high or Cuisinart Griddler to 400 degrees. You can also make these pancakes in a 12 cup muffin tin. Spray with cooking spray.
In a small sauce pan, melt butter, milk and vanilla extract.
In a medium mixing bowl, whisk together the dry ingredients.
Once the butter is melted, set aside and let cool a few minutes before adding to the flour mixture.
Use the same measuring cup for the milk to whisk the egg. Blend that into the batter.
Use an ice cream scoop to make same size pancakes on a griddle or to put into the muffin tin.
If using a griddle, let it sit until the top bubbles (about 2-3 minutes) then flip and let it cook another 2 minutes.
If baking, bake at 350 degrees for 10 minutes. If using a smaller mold, reduce the baking powder to 1/2 tbsp so it doesn’t overflow.
