1/2 cup vegetable oil
3/4 cup sugar
3-4 mashed ripe bananas
1 tsp milk
1 tsp vanilla extract
2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1 cup chocolate chips (Papa Bear prefers white chocolate chips in this)
Preheat oven 350 F and grease a 9″x5″ loaf pan.
In a stand mixer, cream the oil and sugar until light and fluffy.
Beat in eggs one at a time.
Mix in bananas, milk, and vanilla.
Add flour, salt, and baking soda and slowly blend into the banana mixture until just combined and no flour is showing. It’s okay for it to be lumpy.
Gently fold in chocolate chips of your choice.
Pour into the pan and bake for 1 hour. It is done when the edges pull away and a toothpick comes out clean in the middle.
Cool in the pan for a few minutes before turning onto a wire rack to cool completely.
